Pills
I don�t take any pills except on the occasions that I opt for vitamins and �healthy� herbal stuff.
I can take a lot of pills at one time, but only if I don�t give it much thought. Once I think about it, I can�t do it.
Don and I were talking about pill taking this morning, and he�s the same way � can take a bunch if he doesn�t think about it first. Otherwise, gag
My question is, if you take several pills, do you take them one at a time,
or a whole bunch together?

Chicken again?
I was looking through a cookbook for something new to do with a package of chicken from my freezer. I came upon this recipe, and actually had all of the ingredients on hand.
I made it, and served it over rice. I also served it with additional veggies (I love veggies), and some homemade cranberry sauce.
I didn�t serve it till the next day, and it was really great.
The leftovers freeze well.
I love having food in the freezer that just needs to be heated.

Crockpot Orange Chicken Leg Quarters
4 chicken drumsticks and thighs, skin removed
1 cup green and/or red bell pepper strips
1/2 cups chicken broth
1/2 cup orange juice
1/2 cup ketchup
2 tablespoons soy sauce
1 tablespoon molasses
1 tablespoon mustard
1 garlic clove
1 small onion, chopped
Also:
11 ounce can mandarin oranges
2 tablespoons cornstarch
1 box frozen peas
4 or 5 mushrooms, sliced
Place chicken in slow cooker. Top with pepper strips. Combine broth, juice, ketchup, soy sauce, molasses, mustard, and garlic salt. Pour over chicken.
Cook on low 5-6 hours. Measure out 1 cup of cooking sauce. Put in saucepan and bring to boil. Drain oranges, reserving a little juice. Stir cornstarch into reserved juice. Add to boiling sauce in pan. Add peas to sauce and cook, stirring 2-3 minutes until sauce thickens and peas are warm. Stir in oranges. Arrange chicken pieces on platter of cooked rice, (I used brown rice) Pour sauce over chicken and rice.

Three and a half day weekend!
I’ll be taking a 1/2 day vacation today, and our company is closed on Monday for the holiday.
This U.S. holiday is celebrated in February to honor two of our greatest presidents, Abraham Lincoln and George Washington. The holiday is celebrated in the United States on the third Monday in February.

Bread Pudding with sauce
1/4 cup melted butter
1 (10-ounce) French baguette, cut into one inch slices
1/2 cup raisins
1/4 cup Irish whiskey (or apple juice)
1 3/4 cups milk
1 cup sugar
1 tablespoon vanilla extract
1 can evaporated milk (I didn’t use this, I used regular milk instead)
3 large eggs, lightly beaten

1 teaspoon cinnamon
Preheat oven to 350. Brush butter on one side of the bread slices, and place bread, buttered sides up, on a baking sheet. Bake for 10-12 minutes til lightly toasted. Cut bread into 1/2-inch cubes. Set aside.
Combine raisins and whiskey or apple juice, cover and let stand about 10 minutes (don’t drain).
Combine milk and next 4 ingredients; stir with a whisk. Add bread and raisins, let stand 15 minutes. Spoon into a 9x13” buttered pan.
Mix sugar and cinnamon; sprinkle over the top. Bake at 350 degrees for 35 minutes until set.
Sauce
1 1/2 cups sugar
2/3 cup water
1/4 cup butter
2 ounces cream cheese
1/4 cup Irish whiskey
1/4 cup milk
Combine sugar and water in a small heavy saucepan (I used a medium sized cast iron skillet) over medium-high; cook until sugar dissolves, stirring constantly. Cook an additional 15 minutes or until golden (do not stir). Remove from heat. Add butter and cream cheese, stirring constantly with a whisk (mixture will be hot and bubble vigorously). Cool slightly, and stir in whiskey and milk.
I’ll be sure to make it again.

What sport is next?
Well, it looks like football season is over after the rainy game yesterday. And the team that I was cheering for actually won. How great is that?
We went to see the game at a friends’ house, and they served Chicken Chili. It was terrific. The recipe that I think he used can be found here.
