Breakfast on the deck
The weather has been very nice, and we’ve had several meals out on the deck last week.
I love being outside on nice warm days.
(The bowl on the deck is for our visiting cat.
She likes breakfast on the deck too)

HAPPY BLOGAVERSARY TO ME
It’s been five years since my first post, and I posted one of my favorite recipes.
I thought I’d repeat it in celebration. This is the first recipe I entered into my personal cookbook.
Thanks, Mom.
Nanny Mac or My Mother’s Macaroni and Cheese
2 cups elbow macaroni, cooked
1 10 ounce package cheddar cheese, grated
(I use extra sharp yellow cheese)
1/4 cup flour
8 tablespoons butter
3 cups milk
---------------------------------
Butter a 2 quart casserole with about 2 tablespoons of butter
make a cheese sauce with 6 Tablespoons of the butter, flour, 3 cups milk and the grated cheese.
Mix with hot cooked pasta, and let sit till cold. (this is a very important step)
Add additional milk if it seems a bit dry.
Top with additional grated cheddar cheese.
Put in well-buttered (use the remaining butter) casserole dish and bake at 375 degrees for about 40 minutes or until quite brown and bubbly.

Lemon Bars
A friend asked me for this family recipe (although I think lots of families have a similar recipe), so I thought I’d share it.
Aunt Edith’s Lemon Deluxe Bars
Crust:
2 cups flour
1/2 cup powdered sugar
1 cup butter
Cut butter into mixture until it clings together.
Press into a greased 13x9x2” pan. Bake at 350 degrees for 20-25 minutes.
4 beaten eggs
2 cups sugar
1/3 cup lemon juice
1/4 cup flour
1/2 teaspoon baking powder
Beat together eggs, sugar and lemon juice. Mix together flour and baking powder, then stir into egg mix.
Pour over lightly browned crust. Bake at 350 degrees for 25 minutes or more.
Sprinkle with additional powdered sugar. Cool. Cut into bars or squares. Makes 30 bars.
They’re really delicious, and keep well.

Baby Geese
Canada Geese and Their Very Young Goslings
I saw the first of the Canada Geese with their babies today. I love seeing the babies in the spring. A lot of people around here (SE Pennsylvania) think these geese are a nuisance. I just think they’re beautiful. I have noticed in the past few years that they don’t fly south from here. They don’t really even fly in their v-formation any more. Seems like they’ve lost some of their natural instincts..

Strawberry Festival
Last Sunday, we went to the Strawberry Festival in Lahaska Pa. There were lots of strawberries (they were delicious) – and strawberry deserts. And there were beautiful displays of tulips.
“This annual event will feature a variety of red and seedy snacks, from strawberry fritters and chocolate-dipped strawberries to fresh jam. Period craftspeople, including blacksmiths and glassblowers, will demonstrate their trades and hawk products. Jugglers, stilt walkers and musicians will further fuel the good times.”

The weather was great. and we had a very good time.

Another Day to Celebrate
Cinco de Mayo celebrates the victory of the historical battle of 1862 between Mexico and France. This holiday is a symbol of Mexican pride and unity and includes great festivities.
Cinco de mayo is celebrated on the 5th of May The holiday is a remembrance of a David and Goliath-like fight. In 1862, as the French invasion of Mexico began, Mexican General Ignacio Zaragoza’s force of 4,000 soldiers defeated twice as many French soldiers in the Battle of Puebla.
The French occupation would continue until 1866. But the Mexican soldiers’ courage and determination inspired Mexican Americans. Even back then, historians say, California’s Mexican Americans celebrated the win.
Today, it’s become much like St. Patrick’s Day. You don’t have to be Mexican to celebrate it.
