Leftovers for dinner tonight
I decided to use up that leftover chicken tonight, and thought this might be interesting.
Impossible Chicken Taco Pie
2 cups cutup leftover chicken
1/2 cup chopped onion
(1/2 pkg.) taco seasoning mix
sliced mushrooms (if you like mushrooms)
1 cup bisquick
1 cup milk
3 eggs
1 cup - shreddeed cheddar cheese
Heat oven to 400º F. butter bottom and side of 9” glass pie plate. Mix chicken, onion, mushroom and seasoning mix. Sprinkle in pie plate. Mix bisquick, milk and eggs until blended.
Pour into pie plate.
Bake 30 to 35 minutes or until knife inserted in center comes out clean. Sprinkle with cheese. Bake 1 to 2 minutes longer or until cheese is melted. Garnish with tomatoes and sour cream.
A little side salad, and some delicious bread should make a great dinner.

Watch them grow
I found what I wanted, and when I checked out, got the 50% off (a pretty good savings)
AND – in honor of earth day, they gave me two pine seedlings.
Don was out in the rain on Monday planting them. Now we just have to watch them grow!

MahJongg anyone?
There are half a dozen versions of the game and dozens and dozens of looks (changing cards, background, etc.)
I just love it. It was a worthwhile purchase. And a real time waster!

Gardening
My garden is about 20x20, which isn’t really very big, but we usually get a lot of good food from this little patch.
This year I’ll buy my tomato and pepper plants, and just about everything else will be started from seed.
I started my seeds this year in my trusty Pot Maker. Each pot is made from a 3 1/2 by 10 inch piece of newspaper.
I like them best for starting seeds because when you transfer your seedlings to the garden, you plant pot and all.
Now I’m really anxious for warm weather.
