Happy Blogaversary to me!
HAPPY BLOGAVERSARY TO ME!
I can hardly believe it’s been six years since my first post.
This recipe listed the recipe I posted then.
It’s one of our favorites,
and possibly the best macaroni and cheese in the world.
Nanny Mac or My Mother’s Macaroni and Cheese
2 cups elbow macaroni, cooked
1 10 ounce package cheddar cheese, grated
1/4 cup flour
8 tablespoons butter
3 cups milk

Butter a 2 quart casserole with about 2 tablespoons of butter
make a cheese sauce with 6 Tablespoons of the butter, flour, 3 cups milk and the grated cheese.
Mix with hot cooked pasta, and let sit till cold. (very important)
Put in well (use the remaining butter) buttered casserole dish. Top with lots of additional grated cheese and bake at 375 degrees for about 40 minutes or until quite brown and bubbly.

Slinky
“Richard James invented the Slinky by accident.
He was trying to develop a spring that could help keep sensitive ship-board instruments steady at sea.
He knocked some of these experimental springs off a shelf, and was amused by the way they “walked” down, rather than just falling.”
A Slinky is a coil-shaped toy, invented by naval engineer Richard James and his wife, Betty James.
Slinkys come in various sizes, but are usually no larger than a grown adult’s fist when compressed.
The Slinky is famous for its ability to “walk” down stairs as the coils stretch and reform as gravity moves them down each step.

My favorite onions are back in the stores
I love French Onion soup. But sometimes just don’t want to take the time to make it. So I tried this recipe, and it’s really very good. And very easy.
Cream of Vidalia Onion Soup
2 tablespoons salad oil - or olive oil
4 tablespoons flour
3 tablespoons butter
3 cups chicken stock - I used a little more
1 teaspoon salt (optional)
2 cups milk, half and half, or a combination
4 Vidalia medium-sized onions
salt and pepper to taste
Saute onions lightly in butter and oil. After they are sauteed, stir in flour.
Stir in all remaining ingredients and cook - stirring often on low heat until thickened

Oscar’s Tree
Our friendship with Oscar grew over a period of years.
We always brought him a treat when we walked by, one treat on our way to our walk, and another treat for our way back home. He always waited for us.
During his last summer, we moved up to mostly seafood, his favorite - usually 2 shrimp each night.
Oscar died in the spring of 2004 and we were really very sad.
During these nightly visits, we became friendly with “Oscar’s family” and unbeknownst to us, they referred to us as “Oscar’s people”.
Well, shortly after Oscar’s death, Oscar’s parents came by our house and planted a beautiful Redbud tree in our yard,
and then they came down that night with all this huge tree planting equipment, and planted it for us.
We have named the tree, “Oscar’s Tree”. Funny, because of that friendly cat, we’ve met some very nice people, and now we have a tree in our yard
- and all because of Oscar.
