IMP0SSIBLE PUMPKIN SQUARES
This recipe calls for a pie plate, but when I made it that way, Don said “where’s the crust?” So I made it in a square pan, and renamed it. Now he loves it.
It’s really nice this time of year
IMP0SSIBLE PUMPKIN SQUARES
3/4 cup white sugar
1/2 cup biscuit baking mix
2 tablespoons butter
1 (12 ounce) can evaporated milk or 3/4 cup powdered milk powder & 1 1/2 cups water
2 eggs
1 (15 ounce) can solid pack pumpkin puree
2 1/2 teaspoons pumpkin pie spice or 1 t. cinnamon, 1/2 t. ginger, 1/4 t cloves
2 teaspoons vanilla extract
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pan.
In a large bowl, combine sugar and baking mix. Stir in butter, milk and eggs.
Then beat in pumpkin, spice and vanilla to mixture until smooth. Pour into pan.
Bake in preheated oven for 50 to 55 minutes, or until knife inserted in center comes out clean

3 day getaway
It’s so relaxing to be away from phones and chores. I can’t recommend it highly enough.
We stayed at the John F. Craig House, and if there’s a nicer B&B, I’d be surprised.

We had such a nice weekend
We spent Saturday, a beautiful day, at Longwood Gardens. It was not crowded (first time ever for us), and it wasn’t rainy, windy, or cold. Just a really nice day.
There was a Fruit Tasting, which was fun and delicious. We sampled 5 kinds of pears, some concord grapes, and about a dozen varieties of apples.
And on Sunday, we went to Buzz and the Empress’ home and watched a football game.
Our team didn’t win, but we had a very nice time.
Here it is Monday, and the weather is just beautiful.
