Soup day

We’ve had a couple of cool days, and I wanted to try a new soup recipe.  I decided this was a good time. It is really good

Crockpot Italian Soup

1 can white beans - drained
2 (14.5 oz.) can Italian style tomatoes, chopped
2 cups water and beef bouillon
2 cups cubed yellow squash or zucchini -1 medium
2 cans diced tomatoes
1 carrot - chopped
1/2 lb. Italian sausage, cut up into small pieces (I used more)
1 small onion - chopped (vidalia if you have one)
1 clove garlic, minced
1/3 cup dry red wine - optional
1 cup chopped spinach - (I used kale because I had some in the freezer)

Brown sausage; drain off fat. Add to crockpot remaining ingredients. Cover and cook on LOW for 8 hours
You may have to add water to make it soup consistency
