Busy day in the kitchen

We got a bushel of apples and am making applesauce today - and probably tomorrow.  And maybe even longer than that.
This batch is a mixture of macIntosh, satmen and macoun apples.  Should be good.

I traditionally can 50 - 60 jars of applesauce a day.  Some for us and some to give away.

It really smells good in my kitchen.

EVENING UPDATE - the applesauce is made - tomorrow I’ll start the canning.

IMP0SSIBLE PUMPKIN SQUARES

This recipe calls for a pie plate, but when I made it that way, Don said “where’s the crust?” So I made it in a square pan, and renamed it.  Now he loves it.

It’s really nice this time of year

IMP0SSIBLE PUMPKIN SQUARES
3/4 cup white sugar
1/2 cup biscuit baking mix
2 tablespoons butter
1 (12 ounce) can evaporated milk or 3/4 cup powdered milk powder & 1 1/2 cups water
2 eggs
1 (15 ounce) can solid pack pumpkin puree
2 1/2 teaspoons pumpkin pie spice or 1 t. cinnamon, 1/2 t. ginger, 1/4 t cloves
2 teaspoons vanilla extract

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pan.

In a large bowl, combine sugar and baking mix. Stir in butter, milk and eggs.

Then beat in pumpkin, spice and vanilla to mixture until smooth. Pour into pan.

Bake in preheated oven for 50 to 55 minutes, or until knife inserted in center comes out clean

3 day getaway

We just spent 3 wonderful days in Cape May, NJ.  And lucky us, we just missed the nasty weather.

It’s so relaxing to be away from phones and chores.  I can’t recommend it highly enough.

We stayed at the John F. Craig House, and if there’s a nicer B&B, I’d be surprised.

We had such a nice weekend

We spent Saturday, a beautiful day, at Longwood Gardens.  It was not crowded (first time ever for us), and it wasn’t rainy, windy, or cold.  Just a really nice day.
There was a Fruit Tasting, which was fun and delicious.  We sampled 5 kinds of pears, some concord grapes, and about a dozen varieties of apples.

And on Sunday, we went to Buzz and the Empress’ home and watched a football game.  image

Our team didn’t win, but we had a very nice time.

Here it is Monday, and the weather is just beautiful.
Lucky us!

Too Many Zucchinis?

imageI posted this recipe back in August 2003, not too long after I started blogging.

When I made the soup again today, I remembered how good it is.  It sounds a bit weird, but it is absolutely delicious. (that is, if you like zucchini, and if you like soup). 
And it is so easy to make.
So, I’m posting it again.

Cream of Zucchini Soup

4 cups chicken stock (2 cans and a little water will do)
4 medium zucchini sliced ( I used 2 fairly large, they looked like they could be divided into 4 mediums)
2 carrots, sliced
1 chopped onion (Vidalia if you have it)
1 package cream cheese (8 ounces) ( I use the reduced fat, but the real stuff is probably better)
salt & pepper

Cook zucchini, carrots and onion in broth about 20 or so minutes.  Use a fair sized pot.
Puree in blender with cream cheese. season as you wish.

- I like to make it a bit earlier in the day because it thickens a little as it cools

We’re having this soup with dinner tonight and I can’t wait.

We have a quite a few tomatoes in our garden this year.  The plants that have produced the most tomatoes are in pots on the deck.  They were early, and the ones in the ground were a little later.  But they’re all looking good now.

And to celebrate, Don and I had his favorite sandwich for dinner last night - BLT on homemade sourdough bread.

Good news from the Eye Doctor

I had my eyes examined today and I was so happy to hear what the eye doctor had to say.
I’ve been wearing glasses since I was 15, not very strong – and I didn’t wear them all the time. 
And today he told me that I don’t need them any more. 
YES!!  image
