Chicken again?
I was looking through a cookbook for something new to do with a package of chicken from my freezer. I came upon this recipe, and actually had all of the ingredients on hand.
I made it, and served it over rice. I also served it with additional veggies (I love veggies), and some homemade cranberry sauce.
I didn�t serve it till the next day, and it was really great.
The leftovers freeze well.
I love having food in the freezer that just needs to be heated.

Crockpot Orange Chicken Leg Quarters
4 chicken drumsticks and thighs, skin removed
1 cup green and/or red bell pepper strips
1/2 cups chicken broth
1/2 cup orange juice
1/2 cup ketchup
2 tablespoons soy sauce
1 tablespoon molasses
1 tablespoon mustard
1 garlic clove
1 small onion, chopped
Also:
11 ounce can mandarin oranges
2 tablespoons cornstarch
1 box frozen peas
4 or 5 mushrooms, sliced
Place chicken in slow cooker. Top with pepper strips. Combine broth, juice, ketchup, soy sauce, molasses, mustard, and garlic salt. Pour over chicken.
Cook on low 5-6 hours. Measure out 1 cup of cooking sauce. Put in saucepan and bring to boil. Drain oranges, reserving a little juice. Stir cornstarch into reserved juice. Add to boiling sauce in pan. Add peas to sauce and cook, stirring 2-3 minutes until sauce thickens and peas are warm. Stir in oranges. Arrange chicken pieces on platter of cooked rice, (I used brown rice) Pour sauce over chicken and rice.
