Lemon Bars
A friend asked me for this family recipe (although I think lots of families have a similar recipe), so I thought I’d share it.
Aunt Edith’s Lemon Deluxe Bars
Crust:
2 cups flour
1/2 cup powdered sugar
1 cup butter
Cut butter into mixture until it clings together.
Press into a greased 13x9x2” pan. Bake at 350 degrees for 20-25 minutes.
4 beaten eggs
2 cups sugar
1/3 cup lemon juice
1/4 cup flour
1/2 teaspoon baking powder
Beat together eggs, sugar and lemon juice. Mix together flour and baking powder, then stir into egg mix.
Pour over lightly browned crust. Bake at 350 degrees for 25 minutes or more.
Sprinkle with additional powdered sugar. Cool. Cut into bars or squares. Makes 30 bars.
They’re really delicious, and keep well.
