Tasty Veggie
I love winter squash - all varieties. We recently bought an acorn squash and there was a sticker with a recipe stuck to the side of the squash. It sounded good, so I tried it.
If you happen to like acorn squash, I think you’ll find this really good. This recipe will make it off the sticker and into my recipe collection.
Acorn Squash
Cut the squash in half, remove seeds and strings.
Place both halves upside down in a pan with 1/4 inch of hot water.
Bake at 400 degrees for 35 minutes.
Turn squash over, sprinkle lightlywith salt (optional).
Add 1 tablespoon orange marmalade and 1 teaspoon butter, melted and mixed together. (I used a little more of both)
Spoon mixture over the edge of the squash halves. Place under a broiler for five minutes or until lightly browned.
Have a great weekend - We’re expecting warmer weather today, and back to cold winter tomorrow. I intend to enjoy today.

My Granny used to make “squash” pies similar to pumpkin pie out of those butternut squashes and of course being a kid I ate the whole thing, thinking it was the best thing since sliced bread. Well… as I “grew up” and realized squash was nothing like pumpkin, I took a backseat to Granny’s infamous SQUASH PIE. I guess its all in your taste buds, huh?
Give me pumpkin any day and I don’t even want to get started on Zucchini Squash, but I will! One summer a neighbor dumped about 30 of those things on my doorstep and not wanting to be disrespectful or anything, I made relish, pickles and everything Zucchini I could think of. NO MORE ZUCCHINI, thank you very much!
My husband isn’t a big fan of squash so I don’t cook it. This recipe sounds delicious!

We’ve had steady rain all day long with some thunder and lightning to spice things up.
I must confess that I have never bought an acorn squash. I like summer squash and zuchinni, so I’m sure I’d like that recipe you found. I also LOVE pumpkin!! I buy the small cans of pumpkin and eat it with some Splenda to sweeten it up. I know that sounds weird, but I like it. I also LOVE butternut squash soup, so it is clear that I am a fan of squash. Now, I just need to by an acorn squash, don’t I?
