Happy 4th of July
We’re going to a 4th of July picnic this weekend. I said I’d bring something from my new crockpot healthy foods cookbook.
I’ve chosen Hot Crab Dip Appetizer, and Sausage and Peppers.

1/2 cup milk
1/3 cup salsa
3 packages cream cheese (regular, lite or fat free)
1 pound imitation crab meat, flaked
1 cup thinly sliced green onions
4-ounce can chopped green chilies
1. Combine milk and salsa – put into greased slow cooker
2. Stir in everything else.
Cover – cook on low 3-4 hours, stirring every 30 minutes.

Sausage and Peppers
3 onions, sliced (I’m going to use Vidalia onions)
1 each: sweet red, green, and yellow peppers, sliced
4 minced garlic cloves
1 tablespoon oil
28 ounce can chopped tomatoes (I’m using frozen from last year’s garden tomatoes)
½ teaspoon crushed red pepper.
2 pounds turkey sweet Italian sausage, cut into 3” pieces
1. Saute onions, peppers, and garlic in oil. Place in slow cooker
2. Add tomatoes and red pepper. Mix
3. Add sausage links
Cover – cook on low 6 hours.
Serve on rolls, or over pasta or baked potato. ( I haven’t decided on that one yet.
